The "Hedong time-honored brand" Fujiacchang accelerates production to welcome the Mid-Autumn Festival as the mooncake "golden production period" kicks off enthusiastically.

Mooncakes are not only traditional delicacies for the Mid-Autumn Festival, but also convey people's beautiful wishes for reunion and happiness. Although there is still some time before the Mid-Autumn Festival, the annual "golden production period" has already begun enthusiastically in the production workshop of Hejin Fujiacchang Food Co., Ltd. Currently, this "Hedong time-honored brand" is operating at full capacity, using traditional handcraft techniques to accelerate mooncake production, striving to meet market expectations before the festival.

Walking into the production workshop, a rich sweet aroma fills the air. The workshop presents a busy scene, with mechanized production of Cantonese-style mooncakes on one side and handmade traditional deep-fried mooncakes on the other. The most skillful work lies in the traditional deep-fried mooncakes. Workers can be seen kneading dough, rolling dough sheets, shaping, preparing fillings, wrapping, pressing, molding, and finally deep-frying. The traditional deep-fried mooncakes that locals love most come out of the oil fragrant and appetizing. Deep-fried mooncakes enjoy a reputation for their characteristics of "crispy skin and soft filling, sweet and delicious taste, suitable for all ages." Their essence lies in the layers of crispy pastry skin. "20 grams of dough with 45 grams of filling - this ratio is the golden formula passed down for decades, and the filling must be generous," explained Zhao Haiming, who has years of production experience, while skillfully operating and sharing production secrets. "When frying, you must master the water-oil ratio and maintain moderate oil temperature to ensure the mooncake's outer skin has distinct layers, golden and crispy appearance, and thin, soft texture."

A bite of mooncake offers taste and evokes nostalgia. As a representative of Hejin traditional cuisine, Fujiacchang mooncakes carry the nostalgic memories of several generations of Hejin people. Fujiacchang Food Co., Ltd. was formerly the Hejin Municipal Non-staple Food Processing Factory, an established local state-owned food enterprise in Hejin with over 60 years of factory history. The company registered the "Fujiacchang" trademark in 2014 and was selected as one of the first batch of "Hedong time-honored brands" in Yuncheng this year. In recent years, the enterprise has adhered to maintaining tradition while innovating, improving production techniques by combining automated production with traditional craftsmanship. This year, while preserving traditional flavors, Fujiacchang has innovatively launched "food-medicine homology" and "whole grain" series, adding new mooncake flavors including coconut, durian, rose, and beef to cater to younger consumer groups.

Company General Manager Wu Min said: "Mooncake production and sales have obvious seasonality, and currently we are in the most critical production cycle. We are operating at full capacity with streamlined processes from production, testing, stocking, shipping to sales. Currently, we have two production lines running simultaneously with a daily output of about 2,000 jin. During peak season, we will work overtime with daily output expected to exceed 5,000 jin."
