The specialty agricultural product known as Yangbi tribute dried mustard stem is primarily cultivated in Yangbi Yi Autonomous County, Dali Prefecture, across Yangjiang Town, Cangshan West Town, and Shunbi Town, covering a total planting area of over 15,000 mu. The main production and management entities include Yunnan Wan Yao Food Co., Ltd., Yangbi Plateau Wild Development and Trading Co., Ltd., and Yangbi Yi Autonomous County Sangbulao Jiding Ecological Breeding Co., Ltd.

Fresh tribute mustard stems have thick, upright stalks. After peeling, cutting into strips, and natural sun-drying, the dried stems maintain a natural green color, with uniform strips that are free from hollow cores, insect damage, or defects. Grown in the cool highland environment, the stems become crisp and refreshing when rehydrated, offering a satisfying crunch without being tough. They naturally carry a subtle sweetness and resist softening even after prolonged cooking, making them a highly distinctive crispy ingredient.

These stems are rich in dietary fiber, vitamin C, and various minerals, while being low in calories. They are suitable for both fresh consumption and dried processing. The region benefits from abundant sunlight, significant temperature differences between day and night during winter and spring, and a dry, low-rainfall climate. These conditions not only promote the accumulation of proteins, sugars, and other nutrients in the stems but also provide ideal natural drying conditions after harvest, contributing to their unique crunchy texture.

The sandy soil in the basin and semi-mountainous areas is loose and fertile. Planting occurs from October to November, with harvest taking place from January to April the following year. When the stems are fully expanded and before they bolt or flower, they are manually harvested. After harvesting, the stems are promptly peeled, cut into strips, and fully dried outdoors. They are then graded and sorted, and once the moisture content reaches the required standard, they are stored in warehouses to best preserve their natural flavor.

Dried tribute mustard stems should be protected from moisture and pests, while fresh stems should not come into contact with water during storage. For dried stems, remove any broken or discolored pieces and store them in sealed bags or jars in a cool, dry, well-ventilated area. At room temperature, they can be kept for up to 12 months. Adding a few cloves of garlic can help deter pests. For extended storage, refrigerate in an airtight container, and if they become damp, dry them again promptly.

Before use, soak the dried stems in clean water for 2 to 4 hours until fully expanded. They can be enjoyed in various ways, including cold dishes, hot pot, stir-fries, soups, stews, or further processing.
